Urad Dal slow cooked with fresh tomatoes flavoured with kasoori methi in a luscious rich texture loaded with butter & fresh cream
It is a delicious Kidney Beans Curry which is made in Kashmiri households.
It has a burst of flavors from other ingredients, mainly ginger, fennel, and Kashmiri red chilli powder.

It is very natural to be in love with the country where you are born. You belong and you feel there is an unbreakable bond with the ‘mother’ land. To be born in a country which has dialects and cuisines changes every few kilometers; falling deeply in love with food in India is an imperative. The cherry on the cake in my case was because I was blessed to have paternal grandparents from Kashmir, my maternal grandfather from Punjab and my maternal grandmother from Bengal. This heterogeneous mix intensified when my maternal aunt got married into a Sindhi family.
Each dish that I create has strong connects with what I have seen since my childhood, all the eclectic & authentic dishes which my grandmother, my aunts and my mother would cook and I would watch. I had this strange fetish of plopping up on the counter top when my mom used to cook & I would keep watching her while the spices would splutter in the pans and woks, when the cheese cubes would turn to a golden brown from white, and the aromas of the meat blending with the cloves, cardamoms, bay leaves and pepper corns. On the other hand, when the paanch phodon would hit the hot oil in the pan in my maternal grandmother’s kitchen; the five spices crackling away to glory and uplifting a pumpkin, potato stir fry or just a simple parwal; is a long lasting memory.
